Today we’re taking two VeggieJeva recipes and turning them into one! Vegan Spinach Pesto + Easy Pizza Dough = Vegan Pesto Buns.

No weekend is worthwhile without a good dish shared with family and friends. How about you get creative in the kitchen this weekend? Make these delicious rolls (or buns) with my vegan pesto sauce & vegan parmesan that will surely surprise your tastebuds. 

I think they are ideal as an appetizer or as a quick meal accompanied by a good salad, and maybe even a cocktail (or mocktail).

The Process

As I said before, this is a combo of two of my previous recipes, or three if you’re feeling extra! First, start off by preparing the dough. One of the reasons why I love this dough recipe, is that it’s so versatile; you can make a huge batch ahead of time, and then use it on different recipes though the week. For this recipe, I suggest using dough that has been resting for at least one hour at room temperature. 

While you wait for your dough to rest (and rise), prepare the spinach & basil pesto according to instructions. Then if you feel like adding a little extra pizzaz, you can make vegan parmesan cheese to sprinkle on top of the rolls.

Get Creative!

I know I’ve talked about my magic dough recipe before, but I just can’t get over it! It’s incredibly versatile! You can use the dough recipe to make anything, from a traditional pizza, to a more experimental pizza (coming soon), calzones, cinnamon buns, bread rolls, and even some focaccia bread. You can also play with the yeast, by adding beer instead of water, or maybe play with the fermentation period.

Recipe: Vegan Pesto Buns

Ingredients:

Procedure: 

  1. Prepare dough according to instructions. Allow to rise for about 1 hour at room temperature.
  2. While you wait for the dough to rise, prepare the pesto according to instructions. 
  3. Then slightly knead the risen dough, and roll it out into a rectangle. Brush on the top side with pesto sauce and roll up, beginning with a long side. Cut into 1-inch pieces. Put them cut side up into a buttered baking pan and let rise for 15 minutes.
  4. Preheat oven to 375F. Brush rolls with melted vegan butter, sprinkle with minced garlic & vegan parmesan cheese. Then bake for about 30 minutes or until nicely golden.
  5. Serve warm & ENJOY!
