Two words: Slutty. Brownies. When you can’t decide between cookies or brownies, this recipe is here to make all your decadent dessert dreams come true! 

If you’ve never heard of Slutty Brownies before, let me introduce you to them. They are all of your favorite desserts into one; three-layer dessert bars that consist of chocolate chip cookie dough, Oreos, and brownies. Simply put: the most scrumptious dessert you’ll ever encounter. 

Back in the day, this was my go-to dessert recipe. It would do so well at bake sales, but most of the time I just gave them away. For years I’ve been dying to make the vegan version, but I never got the brownie portion of the recipe down until recently. With a few tweaks to my original Super Fudge Brownie recipe, I was able to come up with a new brownie recipe that adheres properly to the other layers of the Slutty Brownies recipe: Oreos and Cookie Dough. 

When I tell you that this is my favorite dessert of all time, I really mean it’s my favorite dessert of ALL TIME. When you make it, take a picture and share your creation with me. So, without further ado, let’s get into the details of Vegan Slutty Brownies.

The making of: Vegan Slutty Brownies

The whole premise of Slutty Brownies is why pick one when you can have all three? 😉 It’s definitely a very decadent recipe, made with various rich, gooey, and chewy layers of chocolatey bliss. They might look like something straight off a bakery shelf, but they are actually easy to make! No boxed mixes or store-bought cookie dough. This recipe essentially just takes a vegan chocolate chip cookie recipe and a vegan brownie recipe, with Oreos sandwiched in the center. 

Let’s break down the layers.

Bottom layer: Vegan Cookie Dough

In a medium size mixing bowl, combine flour, salt, baking powder, and ground flax seed. In a separate, smaller bowl, add vegan butter and brown sugar; melt in the microwave for about 45 seconds (or over a water bath). Whisk together until the sugar is dissolved. Then add vanilla and plant-based milk of your choice. 

Now it’s time to bring both mixes together. Add the liquids mix the medium-sized bowl with the flour. Mix together with a spatula, then knead briefly with your hands to form a dough. Fold in the chocolate chips. Then place in the refrigerator and allow to chill until you finish preparing the brownie batter.

Top layer: Brownie Batter

Start by adding the vegan butter with the chocolate to a medium bowl; melt in the microwave for about 45 seconds (or over a water bath). Next add the sugar, vanilla, apple sauce, and plant-based milk of choice; whisk together until everything is combined and the sugar is melted. In a separate, larger bowl, whisk together flour, cacao powder, salt, and baking powder. Then bring both mixes together by adding the chocolate mixture and whisking until fully combined. 

Assembling

Prepare an 8×8 or 9×9 pan with parchment paper and non-stick spray on the sides. Drop the cookie dough at the bottom and flatten out to an even layer with a spatula or using your hands. Then layer Oreo cookies on top covering every inch of the pan. You can choose to use the cookies whole, or you can break them down into smaller pieces; dealers’ choice! Lastly, pour the brownie batter on top and smooth it out forming an even layer. 

Once you have everything assembled, you can choose to either leave the brownies as they are, or you can add some extra toppings. I chose chopped pecans and chocolate chips.

Toppings suggestions:

  • Chopped nuts
  • Chocolate chips
  • Coconut flakes
  • Crushed Oreos
  • Flaky sea salt
  • Vegan cream cheese
  • Vegan marshmallows 
  • Pretzel chips

And there you have it!  A delicious brownie recipe that’s bound to satisfy all your chocolate cravings! 

Notes:

  • Gluten-free? Substitute all-purpose flour for gluten-free flour or almond Flour. Also, substitute regular Oreos for gluten-free Oreos which are also suitable for vegans.
  • Soy-free? Unfortunately, Oreos are not soy-free. However, this brand is an excellent alternative.
  • I’ve seen versions of this recipe where the layers are flipped. I do not recommend flipping the layers at all. The reason the cookie dough is the bottom layer is that it’s the sturdiest layer and it provides structure to the final result.

Ingredients

Bottom layer: Cookie Dough

  • 1 ½ cup all-purpose flour
  • 1 pinch of salt
  • 1 tsp baking powder
  • ½ tbsp ground flaxseed
  • ½ cup (4 oz) vegan butter
  • ½ cup brown sugar 
  • 2 tbsp water
  • ⅔ cup chocolate chips

Middle layer: Oreos Top layer: Brownie

  • 1 ⅓ cup all-purpose flour
  • ⅓ cup cacao powder
  • 1 pinch of salt
  • 1 tsp baking powder
  • ½ cup (4 oz) vegan butter
  • ¾ cup brown sugar 
  • 3.5-4 oz dark chocolate
  • ½ cup applesauce
  • ¼ cup plant-based milk of choice
  • 1 tsp vanilla extract

  1. Preheat the oven to 350°F. Line with parchment paper an 8x8-inch or 9x9-inch brownie pan and lightly grease with non-stick spray.

Bottom layer: Cookie Dough

  1. Drop the cookie dough at the bottom of the prepared brownie pan and flatten out to an even layer with a spatula or using your hands. 
  2. Then layer Oreo cookies on top covering every inch of the pan. You can choose to use the cookies whole, or you can break them down into smaller pieces; dealers' choice! 
  3. Lastly, pour the brownie batter on top and smooth it out forming an even layer. 
  4. Once you have everything assembled, you can add some extra toppings like chopped pecans and more chocolate chips.
  5. Bake the slutty brownies for about 35-40 minutes, or until no more raw batter sticks to an inserted chopstick. Then remove from the oven and let cool completely before serving. 
  6. Cut into squares, top with vegan ice cream and chocolate syrup to make it more indulgent and ENJOY! and enjoy!
