Vegan Refried Beans Flautas

These Vegan Refried Beans Flautas are filled with refried beans and then crisped up by frying or baking. Topped with guacamole, vegan sour cream pico de gallo, and jalapeños!

I’ve been wanting to make this Flauta recipe for a few months now, and I’m so glad I finally did! I wanted to make an easy and simple meal option that could be put together quickly, and I’m OBSESSED with how they turned out! These Vegan Refried Beans Flautas are the ultimate fun appetizer or a main dish for taco night!

Flautas are essentially rolled tortillas stuffed with a variety of fillings, in this case, refried beans, and lightly fried/baked until golden and crispy. They’re super similar to taquitos, but where taquitos use soft corn tortillas, flautas are made with flour tortillas.

Of course, whether you make taquitos or flautas is up to you, but I find it important to make this distinction to avoid any confusion. So feel free to make these Vegan Refried Beans Flautas with the tortilla of your choice!

The making of: Vegan Refried Beans Flautas

This Vegan Refried Beans Flautas recipe is SUPER fun and easy to make! Here’s how I do it:

First up is the refried beans. You can use a homemade version or, for the sake of keeping this recipe quick and simple, a canned version. If using canned refried beans, make sure to get a brand that uses the “vegan” label, or read the ingredients very carefully. Some brands use “natural flavors” and animal-based broths. Once you have the refried beans sorted out, spread a thin line of refried beans all the way down a tortilla, close to one of the edges (never in the middle). 

Then tightly roll the tortilla over the filling. When you finish rolling each flauta, place the seamed side down on a parchment-lined baking sheet or on a cooling rack. And finally, cook! For this recipe, you can choose to fry, bake or air-fry the flautas. As always, it’s my opinion that frying yields the best crispy results, however, you choose your desired method; I’ve included instructions for baking and air frying in the notes.

Now, don’t be fooled by the simplicity of this recipe, these flautas are slam-packed with flavor. If you make homemade refried beans you have total control of the seasoning, and most canned refried beans have cumin, garlic, onions, and paprika for extra flavor! 

After the Vegan Refried Beans Flautas are gold and crispy, serve with your desired toppings! You can’t go wrong by serving them with guacamole, pico de gallo, vegan sour cream, and pickled jalapeños. And I wouldn’t be opposed to this vegan cheese sauce as a topping either! Now all that’s left is to dig in!

Variations

One of the reasons why I love flautas so much is because you can really play around with the recipe. You can change the fillings, the toppings, and even the tortilla kind! But I truly love them just like it is here. 

Filling variations:

  • Refried beans + vegan shredded cheese
  • Jackfruit + vegan shredded cheese
  • Soy ground + vegan shredded cheese + taco sauce
  • Spicy chickpea

Topping variations:

Notes:

  • To make your tortillas extra pliable, warm the tortillas before you roll them up. You can do this either in the oven for 3-5 minutes or in the microwave, wrapped in a damp paper towel, for 30 seconds.
  • Super important to spread the filling towards one side of the tortillas, not in the center! This way, you’ll be able to roll the tortilla as tightly as possible without the filling falling off of it. 
  • Gluten-free? Use corn tortillas! They tend to be thinner and come out a little crispier.
  • Make-ahead? Yes, you can make this recipe ahead of time and freeze the flautas before cooking. They will keep in the freezer for up to a month! 
  • Leftovers? Unfortunately, after cooking the flautas they won’t hold their shape or texture together for long. It’s definitely best to eat right away, and let’s be honest, there won’t be any leftovers😂
  • BAKING: Once you’ve rolled up the flautas, place them all in a single layer onto a parchment paper-lined baking sheet. Spray the tops of the flautas with cooking spray and bake at 400F for 10 to 15 minutes, or until golden brown and crispy.
  • AIR FRYING: Once you’ve rolled up the flautas, place them all in a single layer onto the air fryer tray. Spray the tops of the flautas with cooking spray and air-fry at 350F for 10 to 15 minutes, or until golden brown and crispy.

Ingredients

  • 1 can of vegan refried beans
  • 6-12 3in flour tortillas
  • Canola oil (for frying)
  • Toppings: guacamole, vegan sour cream, pico de gallo, and pickled jalapeños

Procedure

  1. To a frying-friendly pan, add 2-3 inches of oil and heat to medium heat, or until it reaches 350F.
  2. Spread a thin line of refried beans all the way down a tortilla, close to one of the edges (not in the middle). Roll up as tightly as you can, and place the seamed side down on a parchment-lined baking sheet or on a cooling rack.
  3. Once the oil is ready, place the flautas in and fry for 1-2 minutes, turning as they cook, until golden and crispy to your liking. Fry in batches!
  4. Use a slotted spoon to remove flautas from the oil and allow them to cool slightly on a paper towel-lined plate. WARNING: These flautas smell really good. And when they come out of the stove, you’ll feel an overwhelming compulsion to eat one immediately. RESIST THE URGE, you do not want to scorch the roof of your mouth! These need to cool down for about 10 minutes before they can be safely eaten.
  5. Serve right away and top with guacamole, vegan sour cream, pico de gallo, and pickled jalapeños. ENJOY!
