Vegan Beer-Battered Mahi Mahi Bites

Turn artichoke hearts into a delicious appetizer. Crispy Vegan Beer-Battered Mahi Mahi Bites with a garlicky Mayo-Ketchup dipping sauce. Fried to perfection!

Back in October 2021, I worked on the Spinach & Artichoke dip recipe for my Halloween series. I ended up having TONS of leftover artichoke hearts that I refused to let go to waste since, in all honesty, it was quite literally the first time that I’ve ever worked with artichokes. 

So I did what humans do best when they don’t know something: Google. Lots of ideas popped up, but I was looking for something simple and craving something crispy. Ultimately, I thought “what if I use my beer batter onion rings recipe for the artichokes? Surely they’d turned great…” And they did! 

That day, the only person available in my house to try them was my step-dad. He quickly asked, “Why does this taste and feel like mahi-mahi bites?” “Yeah, this definitely tastes like dorado.” Hence the name of this recipe: Vegan Beer-Battered Mahi Mahi Bites. I figured, there are many “crispy artichokes” recipes out there already, but no vegan Mahi Mahi or even vegan Dorado

The making of: Vegan Beer-Battered Mahi Mahi Bites

For this recipe, canned artichoke hearts work best, as they’re easily found in supermarkets, are inexpensive, and cut prepping time in half. But why artichokes? I choose artichokes because the look and feel of artichoke hearts resemble fish like no other vegetable. I’ve never truly thought about it until my step-dad brought it up, and was later again confirmed by my partner.

Plus they are incredibly versatile, filling, and flavorful. Artichokes have proven to be an excellent source of antioxidants, fiber, vitamin K, vitamin C, potassium, and magnesium. I love that they make it so easy to step outside the “comfort food zone”, and can be added to pizza, pasta, soups, dips, etc.

Now, let’s get on to the recipe…

To make Vegan Beer-Battered Mahi Mahi Bites, first, you’ll prepare the beer batter with a lager beer, like Heineken, herbs, and spices. Then you’ll need to drain the quartered artichoke hearts and dip them in the batter. As a final step, choose your preferred method of cooking; you fry them, bake them, or air-fry them. As always, in my opinion, frying yields the crispiest result which is why it’s my preferred method for this recipe. (find instructions for other methods in notes)

The other component of this dish is the dipping sauce. I don’t know about you, but there’s no better dipping sauce for battered food than the glorious Mayo-Ketchup. It’s a classic Puerto Rican sauce that’s creamy and savory. I already have a vegan version of it, which you can find here

What I also love about this recipe is that you can make it when unexpected guests arrive because it really just takes a few minutes to assemble, with no prepping, and then all you need to do is cook. ​​If you are planning to make them for a party, better make a double batch. They will be gone quickly!

Notes:

  • Make sure for this recipe to only use canned artichoke hearts in water or the brine. Not the ones that come in oil because the oil will prevent the batter to stick.
  • To make this recipe gluten-free, substitute the all-purpose flour for chickpea flour
  • If you want to make them ahead of time, these freeze really well. Just cook, let them cool completely, and then freeze. When ready, heat in a 400-degree oven for 15 minutes before serving.
  • BAKE INSTRUCTIONS: Preheat the oven to 400 degrees Line a baking sheet with parchment paper and set aside.Bake artichokes for 18 minutes or until golden brown. Turn once halfway through baking.
  • AIR-FRY INSTRUCTIONS: Preheat the air-fryer to 370F. Place coated artichokes into the Airfryer & cook for 10-15 minutes. Remove & repeat with any remaining artichokes.

Vegan Beer-Battered Mahi Mahi Bites

Ingredients

  • 1 (24-oz.) jar marinated quartered artichoke hearts, drained and thoroughly patted dry
  • 1 cup all-purpose flour
  • ½ tsp baking powder
  • ¾  cup of lager beer
  • 2 tbsp cold water
  • Seasonings to taste: Salt, pepper, garlic powder, onion powder, and paprika.
  • Oil for frying

Procedure

  1. Whisk together 1 cup flour, the seasonings, and baking powder in a medium-sized bowl. Whisk in beer and cold water until combined. The texture should resemble pancake batter.
  2. Heat oil in a large frying pan over medium-high.
  3. For better results, work in batches; don’t crowd the frying pan. Dip artichokes in batter and shake off excess. Carefully add to hot oil. Cook until golden brown, about 2 to 3 minutes.
  4. Transfer to paper towels to drain, and immediately sprinkle with salt.
  5. Serve with mayo-ketchup, or your favorite dipping sauce, and ENJOY!
