Halloween Baked Potatoes

One of my favorite holiday after Christmas is Halloween! I love the decorations, Halloween costumes, the parties & the creative recipes! Also, my coworkers take Halloween very seriously; we decorated all of our locations on the very first day of October, we currently have 2 Halloween competitions going on, and a Halloween party coming up. 

IMG_1745So this has me really excited for creating new fall recipes! I love to make pumpkin everything, seasonal dishes and even decorate my food for Halloween. These Halloween Baked Potatoes just became a new favorite; they’re a healthy & fun recipe that everyone will love.

Halloween Baked Potatoes

Serves: 4-8 Prep Time: Cooking Time: Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 4-8 potatoes
  • Avocado oil, or olive oil
  • Salt & pepper to taste

Procedure

  1. Preheat oven to gas 400F. 
  2. While the oven is preheating, use the end of a small, sharp knife to carefully carve faces into the potatoes: carve out eyes, noses, and mouths.
  3. Place potatoes with the faces facing upwards on a parchment-lined baking tray, drizzle the oil & salt. Bake for 40-45 minutes, or until golden and crispy. 
  4. Meanwhile, prepare your toppings. I topped mine with green onions, vegan bacon bits & a vegan cashew aioli.
  5. Serve immediately, and ENJOY!
