These cookies seriously couldn’t be easier, and they couldn’t be tastier. Chunks of sweet cherries are surrounded by peanut butter as a great source of protein and fiber. 

Perfect for those mornings where you need breakfast on the go, but still have a special flair.

Notes: 

  • Leftovers? These cookies keep in an airtight container in the fridge for up to a week.
  • Can you bake these no-bake cookies? Yes! You can bake these in an oven preheated to 350 F for 12-15 minutes.
  • Substitutions: peanut butter for almond butter, cashews for almonds or walnuts, and maple syrup for agave.

Ingredients

  • 1 cup raw cashews
  • ¾  cup old fashioned rolled oats
  • 3 tsp chia seeds
  • ¾ cup peanut butter
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • ¾ cup cherries

Procedure

  1. To a food processor, add the cashews, oats & chia seeds. Process until everything is incorporated.
  2. Place the peanut butter, maple syrup, and vanilla in a microwavable bowl and microwave the ingredients for  20 seconds or until the peanut butter is soft.
  3. Stir the peanut butter mixture until well combined then add to the food processor. Process until everything is combined and then blend in the cherries.
  4. Lay out a sheet of baking paper and a spoon to scoop the mixture onto the baking paper.
  5. Use the back of a large spoon to flatten down the cookie into a circular patty
  6. Repeat until you use up the rest of the mixture.
  7. Place in the fridge for about an hour or overnight, to allow them to set.
  8. Serve, and ENJOY!
