Vegan Greek TostadasThinking about staying in for Valentine’s Day? Try whipping up these refreshing & savory vegan tostadas topped with a greek salad, pomegranate and cilantro sauce. With the sweetness from the pomegranate and the crunchiness from the cucumber, this dinner will have all sorts of textures and flavors popping in your mouth!

Whether you are cooking a romantic dinner for two or you have friends gathering planned, you will find these tostadas to be perfect for getting some quality time and a tasty meal without leaving home.

  • If you happen to come across vegan feta (I recommend Violife), definitely add it to these tostadas for an extra kick.
  • To keep this recipe gluten-free use corn tortillas.

Vegan Greek Tostadas with Vegan Cilantro Sauce

Ingredients

  • Tortillas
  • ⅓ cup hummus

Greek Salad:

  • 1 medium-sized cucumber, seeds removed & chopped
  • 1 cup cherry tomatoes, chopped
  • ½  cup black olives, chopped
  • ¼  cup red onion, diced
  • ¼  cup parsley, chopped
  • 1 tbs olive oil
  • Juice of  ½ a lemon
  • Salt & pepper to taste
  • ½  cup pomegranate arils

Vegan Cilantro Sauce:

  • ½ cup raw cashews
  • ½ cup unsweetened plant-based milk of choice (+more)
  • Seasonings to taste: fresh or dry cilantro, garlic powder, onion powder, salt, pepper, & nutritional yeast.

Procedure

  1. To a medium-sized bowl, add the cucumbers, tomatoes, olives, onions, parsley, pomegranate, olive oil & lemon juice. Toss to combine.
  2. Add all of the cilantro sauce ingredients to a bullet blender, and blend together until creamy. If the sauce is too thick, you can add more plant-based milk.
  3. Toast the corn tortillas until golden brown and crispy, in a lightly greased pan.
  4. Top the tostadas with a layer of hummus and salad. Drizzle with cilantro sauce and enjoy!
