Vegan French Toast

Make the BEST vegan french toast with just 5 ingredients. With a crispy, yet fluffy exterior and super satisfying. Complete with your favorite toppings and you’ve got yourself the perfect weekend brunch recipe!

Vegan French ToastGrowing up, two of my favorite breakfast foods were oreo pancakes & french toasts. I would always get so excited about the weekend because I knew that I would have time to make either one of those. These french toasts are a bit different than the ones from my childhood… completely vegan and gluten-free! 

IMG_0239IMG_0244How to: The batter for this recipe consists of coconut flour (or gluten-free flour of choice), plant-based milk, flax meal, cinnamon, maple syrup, and of course the bread. Mix everything together in a bowl, and then dip the bread in the batter, fry it up in a pan, and serve with your favorite toppings.

Super important: in order for this recipe to stay gluten-free, use gluten-free bread; I used coconut bread. The same goes for the flour. However, if you don’t care for gluten, you can use regular bread & flour.

Ingredients

  • 1 cup of non-dairy milk
  • ½ cup coconut flour
  • 2 tbsp of flaxseed meal
  • 1 tsp of cinnamon
  • 1 tsp of vanilla extract
  • 8 thickly cut slices of bread
  • Vegan butter

Procedure

  1. In a deep bowl, mix non-dairy milk and vanilla extract. In another bowl, sift together the flour, cinnamon & flaxseed meal.
  2. Whisk in the deep bowl with the wet ingredients, add the dry ingredients.
  3. Heat the pan to med-low heat, and add 1tbsp of vegan butter.
  4. Lightly dip the slices of bread in the milk mixture so that the bread is just covered on each side but not soaked. Do not let the bread sit in the batter.
  5. Cook the slices of bread in the pan for about 4 minutes on each side or until a nice golden brown.
  6. Once done, top with your favorite toppings, like chopped nuts, coconut flakes, berries, vegan nutella and/or maple syrup. ENJOY!
