Creamy Vegan Alfredo Sauce

The creamiest Vegan Alfredo Sauce, made with cashews & hemp seeds. Serve with fettuccine and mushrooms for a quick amazing meal!

Creamy Vegan Alfredo SauceWhat makes for the perfect alfredo sauce? For me, it’s the creaminess! And there’s nothing better than a creamy, dreamy pasta sauce! Now, I’ve made this sauce so many times, with different variations: the tofu one, the potato one, the cauliflower one. None of those worked for me! I can guarantee that this combination of cashews & hemp seeds is a winner. Which makes for the perfect vegan comfort food.

There’s no need for fancy ingredients for this creamy vegan alfredo sauce. Except for the nutritional yeast, you should be able to find everything in any regular grocery store; but many grocery stores also have nutritional yeast these days.

Creamy Vegan Alfredo Sauce

Ingredients

  • 1 cup raw cashews
  • ¼ cup raw hemp seeds
  • 1 small yellow onion
  • 2-4 garlic cloves
  • 2 tbsp olive oil
  • 2 cups water
  • ⅓ cup nutritional yeast
  • Fresh herbs: parsley, rosemary, etc.
  • 1 cup mushrooms, sliced
  • Pasta of choice

Procedure

  1. Cook your choice of pasta according to the instructions.
  2. Meanwhile, in a large pan over medium heat, add oil and sauté garlic and onions for about 5 minutes. Then add the mushrooms, season with a pinch of salt, and sauté for 6 more minutes.
  3. Add to a high-speed blender the raw cashews, hemp seeds, and water. Blend on high speed until fully smooth.
  4. Pour the cashew cream over the sautéed mushrooms and bring the heat to low. Simmer for 3 minutes, until sauce begins to thicken slightly. Add the nutritional yeast, salt & pepper to taste, and parsley.
  5. Once the pasta is cooked and drained, transfer to the sauce. If needed, add a ½ cup of water to the pasta and mix all together until fully coated with the sauce.
  6. Serve right away, and ENJOY!
