Carrot Cake Bites

These raw Carrot Cake Bites will be your new favorite snack, perfect for refueling! You’ll only need only 5 main wholesome ingredients: nuts, oats, dates, carrots & coconut. They really taste like dessert & are super easy to make!

Today we’re celebrating International Carrot Day with this amazing recipe! (which was yesterday, April 4th)

I’ve been dying to post this recipe, but I didn’t want to go the classic route of a date ball. I felt like that recipe needed a kick, hence the Carrot Cake version! They’re filled with all of the good stuff like walnuts, rolled oats, dates, carrots, cinnamon, nutmeg & coconut. With these everyday ingredients, the flavor is outstanding, without the need for processed sugar or flours.

IMG_9675Did I mention these were easy to make? Just throw everything into the food processor, blend it up, and roll the dough into balls. They’re energizing, flavourful, naturally sweetened and contain extra nutrition from the carrots. All this, without having to switch your oven on!

Other uses for this recipe:

  • Make bars instead of bites
  • Pie or vegan cheesecake crust
  • Try making a raw-nola or granola

Note:

  • If your dates have been in the fridge, or are looking kind of dry, place them in warm water for approximately 10 minutes, before adding to the food processor.

Recipe: Carrot Cake Bites

Yield: 20 balls

Ingredients:

  • 1 ½ cups walnuts
  • ½ cup oats
  • 1 ½ cups pitted dates
  • 2 medium-sized carrots or 1 large carrot, chopped
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • Optional: shredded coconut

Procedure:

  • All all of the ingredients to a food processor, and blend until a thick dough forms.
  • Roll into approximately 20 balls, and cover with shredded coconut.
  • Store in a tight container, in the fridge or freezer.
  • Enjoy!
